2 Cups Basil, Tightly Packed
3 Tablespoons Almonds, Walnuts, or Pine Nuts
1 to 3 Garlic Cloves
1/2 Teaspoon Salt
1/2 Teaspoon Fresh Cracked Pepper
2 Tablespoons Nutritional Yeast
2 Tablespoons Lemon Juice
1/3 Cup Olive Oil
Toast the almonds.
Cook the garlic in some olive oil if you don’t want your pesto spicy, or just add one raw clove.
Blend everything to the consistency that you like and add more olive oil if it’s to thick.
You can replace some of the olive oil with water if you want it lower in fat.
The nutritional yeast isn’t essential but it will add a cheesy flavor.
